Almost Famous Pumpkin Cookies

These cookies are a hit everytime I make them. Even people that don't really like pumpkin, love these cookies.

1 cup sugar
1 cup butter, softened (not melted)
1 egg
2 tsp. vanilla
1 cup canned pumpkin

2 1/2 cups flour
2 tsp. baking powder
1 tsp. baking soda
(The original recipe didn't call for spices, but I like to add these common pumpkin pie spices to taste)
1/2 - 1 tsp. cinnamon
1/4 - 1/2 tsp. ground ginger
1/8 - 1/4 tsp. ground cloves

Preheat oven to 350 degrees. Cream sugar and butter. Then add egg, vanilla and pumpkin. Mix until blended. In a separate bowl, mix together dry ingredients including spices. Add dry ingredients slowly to wet mixture. Mix until blended.
*The dough will be soft and sticky.

Drop by teaspoon full on cookie sheet and bake for 12-15 min. Cool on pan for a few minutes then move to cooling rack. Frost with cream cheese frosting. These cookies freeze well and also can be eaten right out of the freezer.

Makes 3-4 dozen

Cream Cheese Frosting

1 cup butter, softened
8 oz. cream cheese, softened
1 lb. powdered sugar
1 tsp. vanilla
1/2 tsp salt (I usually omit the salt and just use 1 stick of salted butter and 1 stick of unsalted butter for the butter in this recipe)

Blend butter and cream cheese. Mix in powdered sugar, small amounts at a time until all of it is added. Add in vanilla and mix until creamy.
